Chocolate Chip Banana Muffins

Mix together

1 3/4 cups flour

3/4 cup sugar

1 tsp Baking powder

1 tsp baking soda

1/2 tsp salt

In a separate bowl, mix

1 egg (beaten)

1/2 cup vegetable oil

1/2 cup plain yogurt

1 tsp vanilla

1 cup mashed banana

3/4 cup chocolate chips

Mix into dry contents.

Put into greased or lined muffin cups or a greased bread or cake pan.

Bake at 350 degrees for 22-25 minutes.

Let cool for ~5 minutes before removing from pans to cooling racks.

1 c shortening
2 c sugar
4 eggs
2 ½ c flour
1 tsp salt
2 tsp baking soda
5 medium bananas, mashed
3 tsp buttermilk
1 tsp vanilla
1 c chopped pecans or walnuts

Preheat oven to 325.
Mix shortening and sugar until creamy.
Add eggs, 2 at a time, mixing well.
Sift flour, salt and baking soda together.
Combine creamed mixture, dry ingredients, bananas and buttermilk, using 1/3 at a time.
Add vanilla and nuts; mix well.
Bake in 2 greased 9 x 5 loaf pans for approximately 1 to 1 ¼ hours.
